If you are trying to prepare for your Super Sunday small group gathering, here are four simple recipes to help keep everyone happy.
3 ripe avocados (peeled and pitted)
3 Tblsp. of your favorite prepared salsa
½ pkg of dry ranch dressing mix
Mash avocados with the back of a large spoon. Add salsa and ranch mix. Mix until combined and creamy. Serve with tortilla chips.
Buffalo Chicken Dip
8 oz. cream cheese
3 cups of shredded chicken (A rotisserie chicken from the grocery store is delicious and easy)
¾ cups of hot sauce or wing sauce (add more or less depending on how spicy you want it)
1 cup of chunky blue cheese dressing
8 oz. shredded sharp cheddar cheese
¼ cup of crumbled blue cheese
Mix first five ingredients in a slow cooker and heat on low until warm and bubbly. Sprinkle crumbled blue cheese on top before serving. Serve with carrots, celery and tortilla chips.
Slow Cooker Barbecue Ribs
½ to full rack of ribs
2 cans of pinto beans or baked beans
1 bottle of your favorite barbecue sauce
Slice rack into sections of 2-3 ribs so they will fit easily into slow cooker. Rub with a generous amount of your favorite dry rub (I like Corky’s). Broil in the oven 8 minutes per side or until brown.
Pour both cans of beans in the bottom of slow cooker. Cover with ribs. Pour over the entire bottle of barbecue sauce. Cover and cook on low for 7-8 hours. The meat should fall off the bone.
1 lb. of little smokies/cocktail weenies
1 can of condensed tomato soup
¼ cup brown sugar
2 tbsp. water
3 tbsp. white vinegar
1 tbsp. Worcestershire sauce
1 tbsp. of lemon juice
Combine all ingredients in a slow cooker. Cook on low until heated through.
